A set temperature is a target
A pellet smoker cycles fuel and airflow to maintain heat. Temperature naturally moves around the set point, and cold, wind, lid openings and a large food load affect recovery. Compare how the controller responds rather than expecting the display to remain on one exact number.
Controller types affect adjustment
Basic controllers use fixed timing or broad increments. PID-style control can adjust feed behavior using temperature feedback, but tuning and sensor placement still matter. A controller label does not ensure identical performance across cookers.
Probe features need practical checks
Integrated food-probe ports reduce clutter, but verify how many probes are included, their temperature range and replacement availability. Cooker probes measure air near one location; grate-level temperature can differ. Independent verification is useful when learning a new smoker.
Connectivity is convenience, not combustion safety
Wi-Fi and Bluetooth can send alerts and allow remote setting changes, but connections fail and phones lose power. Never use remote monitoring as a substitute for safe placement, grease control and periodic physical checks.
High-heat claims vary
A maximum controller setting does not guarantee direct-flame searing. Some grills include a sliding diffuser or dedicated sear zone; others cook indirectly even at high temperatures. Compare grate material, heat path and usable searing area.
